This label was the first sparking wine made in Western Australia. This is the second release of our replica wine, comprised of 100% estate grown Chenin blanc, aged and refermented in bottle without inoculation via laboratory yeast strains.
This is a rare wine, as a natural secondary alcoholic fermentation is only possible after a strict chemical free vinification and elevage. Despite marketing hype, other sparkling wines such as Champagne, Prosecco and Cava are the opposite of natural wine, requiring constant intervention from the time of budburst to the final bottled product.
Here we have used a non-vintage approach and the better overall ripeness achievable in the Swan Valley to create a balanced, rounded base wine that doesn’t require the typical dosage needed to make cool-climate sparkling wines palatable.
The fine and persistent bead is due to the lack of fining in the base wine, but despite this, the wine is brilliantly clear post-disgorgement.
For the health-conscious, lovers of bubbles, it doesn’t get any better.
