Long experience with old dry-grown Grenache vineyards has informed our approach to this wine, since the first in 2011. Hand harvested in three separate picks with a portion reserved for full carbonic and another subject to extended maceration, the final assemblage captures the regional, perfumed red cherry, rose petal and freshly tilled soil notes, whilst accentuating the amaro-like tarry finish. The was matured in imported Georgian qvevri and bottled without fining, filtering or additions. 100% Grapes.
