Piquette is an ancient drink, allegedly drunk by vineyard workers who were part paid in grape marc (left over skins from ferment).
We have flipped the concept, with moderate alcohol (8%), Hallertau hops from Great Southern Hops for stability and Yate honey from one of our growers, which according to the queen bee honey specialist Lou from Yume Wines, is a fairly neutral, yet full-bodied nectar.
This is enough to kick off a secondary ferment for Frizzante, without dominating the grape / hops.
Really cool to launch a product that includes some top notch WA based suppliers.
